Here’s what I’ve been up to this week!

(UGG 5:30am  wake up calls!!)

What have you been up to?

Pinterest Reads My Mind

30 May

Correct me if I’m wrong, but sometimes I think Pinterest can read my mind.  If I’m hungry, Pinterest tempts me with delicious-looking, horribly bad for you desserts….

Mocha-Chip Meringues

If I’m feeling uninspired, Pinterest brings me inspiration…

Pinterest gives me a ton of great ideas of how to spend my first paycheck of the summer…

Obviously, Pinterest knows how to take up all of my free time! But sometimes, it’s so worth it 🙂

Can Pinterest read your mind?

Why I have the best sister ever (no, seriously.)

29 May

It’s official. I have the best sister ever.  For you doubters out there I will tell you why 🙂

1. We can express ourselves in embarrassing awesome facial expressions instead of words..

2. She loves pigs (she has a Pinterest board full of them)

3. She inspires me. Someday I hope to run as fast as she does! For now I will settle with letting her leave me in the dust and then making her wait while I catch up 🙂

why i run 2

4. She has a great heart, and shes GORGEOUS! I mean look at her! (Ahem, and I suppose since we are identical twins, and you know, look alike, that must mean…..)

5. We have so much fun together!

Is your sister as awesome as mine??

It’s Tuesday

28 May

It’s Tuesday, my friends, and you know what that means? 4 days till the weekend! (I love three day weekends—it’s like a mini vacation).

On to today’s topic: chocolate. Six months ago I would have told you that I prefer the milk varieties but I have finally seen the light (or the dark, I guess) and FULLY converted to dark chocolate consumption.  Milk chocolate is full of sugar which always left me feeling jittery and un-energized.

I decided to do a little experimenting in the kitchen last night and came up with this gem…

Think those awesome no-bake-chocolate-peanut-butter-full-of-sugary-goodness cookies of our childhood, but healthified.

2 tbsp. peanut butter
2 tbsp. milk
1/4 cup dark chocolate chips
3/4 cup oats

Heat peanut butter, milk and dark chocolate chips over low heat until it looks something like this…

Add oats and form into balls!

…and then lick the bowl clean, obviously.

I know they say that baking requires exact measurements, but honestly I think it’s a little more fun when you wing it.

I was in true experimenting form tonight! My amendments included:

Honey Peanut Butter (the recipe only calls for two tbsp. but I think heaping tablespoons are better)

My favorite swap: using chocolate almond milk instead of regular milk !

I didn’t have chocolate chips on hand but I did have the remains of dark chocolate fondue so of course I had to use that!

This recipe was originally called Dark Chocolate Love Bites, so you are welcome to eat them with your loves…

…or on any other occasion!

I personally am going to freeze these gems and pop one in my lunch this week for an afternoon pick me up.

What do you do to get out of that afternoon slump?

25 May

AHH! After long months of being apart, we are finally back together!!

Let the fun begin!

We started the morning off with a sweaty 2 mile run.  Hanna kept up with Haley the whole time for the first mile 🙂

After our run, we worked our abs with this awesome workout!

Eats included…

Hanna’s salad included: lettuce, salsa, shredded Canadian bacon, cheese.

Haley’s included lettuce, orange slices, shredded Canadian bacon, gorgonzola cheese (which Haley is addicted to).

And then dessert…*Disclaimer: If you make these prepare to eat ALL of them. Seriously. So good!*

Enter: TJ’s blondie bars

That’s all for now! Enjoy your long weekend. 3 weeks till Haley is home for good!

People Watching

24 May

I love people watching.

Ok, so maybe I don’t look that creepy when I people watch. I try to be more discreet 🙂

This morning’s bus ride to my internship had prime people watching conditions.  I decided it would be not appropriate to include pictures so you will have to use your imagination…

the compulsive packer: I watched an elderly woman carefully (and I mean carefully) fold her raincoat after she got on the  bus. Seriously? This is the Pacific Northwest! You’re gonna need that raincoat.
the cell phone user:  Oh, the cell phone user. I find these folks to be absolutely fascinating! Do you really think its a good idea to have a personal conversation with someone when everyone else on the bus can’t help but hear everything you are saying??
the lazys: My nickname for high school students who ride the bus to avoid walking a few blocks to school.  No wonder obesity is a growing epidemic!
the personal groomer: Now this one is gross.  I certainly understand the need to multitask, but sometimes multitasking can go too far…like the man who clipped his fingernails on the bus. eww.

It’s almost Friday! Enjoy your long weekend!

23 May

This week has been a challenge. I’m waking up earlier that I have ever had to (5:30am) and not getting back home until the evening.  Unfortunately, working out and eating right have totally taken a back seat but I’m trying to figure out ways to fit in exercise when I can (taking the stairs instead of the elevator) and eliminating stress snacking! See our Pinterest boards for clean eating ideas!

Here’s an update on this past week!

What I’m wearing….

What I’m eating…

(beans and rice!)

(quick overnight oats!)

What I’m reading…

(Still reading “Not everyone gets a trophy”–awesome book! Totally recommend it if you are in the communications field)

See you tomorrow!
