Chopped Challenge

Last night I came home to find a challenge waiting for me, a chopped challenge.

Let me explain. In 4 short days, I (Hanna) am headed off to start my 3rd year of college. For the past two years, I’ve relied on the cafeteria for lunch and dinner but those days are over!

Part of me is excited. I get an opportunity to eat a lot healthier. The other part of me is not so excited. I have to cook for myself, and cooking takes both time and energy which are very hard to come by when you’re a full time college student.

The Challenge:

  • 1 can of black beans
  • 1 package of microwave rice
  • veggies

and 1 hour to make dinner…

Ok, so in retrospect a full hour is plenty of time to make dinner for one 🙂

Here’s what I did:

Step 1: Gather the ingredients

Organic Black Beans (Trader Joes)

Onions, Peppers and Broccoli (I HATE broccoli, but I made myself experiment)

Microwave Rice (Trader Joes)

Soyaki Sauce (Trader Joes)

Step 2: Chop Veggies

Step 3: Get a pan nice and hot with a little olive oil (canola will work too)

Step 4: Saute Veggies

Step 5: Add your sauce of choice to the mix

Step 6: Add black beans (drained and double rinsed)

Step 7: Add pre-microwaved rice

Step 8: Top with a few tortilla chips

Step 9: Devour! I call it “Hanna’s 10 Minute Stir Fry.”
