Let’s be honest here. When life gets crazy, the last thing you want to do is take time to make a well-thought-out meal. But you can take time to eat a well-thought-out meal, right?

Leftovers are a lifesaver when you get bogged down with work mid-week. I always try to cook a little extra on Monday’s when I 1. Have the most energy, and 2. Have the most “free” time on my hands.

Granted, “leftovers” sometimes just means whatever is left in the fridge, no matter where it came from, but food is food. I would rather eat a hodge-podge mix of random food stuffs than binge on junk food (chips, candy, snacks).

Here are some of my leftover “gems” from this week:

An absolute masterpiece! Honey Dijon Chicken (yes, that is salad dressing I used).

The Honey Dijon Chicken also showed up on a pizza later this week. The pizza was also topped with cheese and leftover pasta sauce)
