Weekend Update and Cake Baking!

Happy Sunday!

It’s officially only 2 days until Thanksgiving Break begins, and only two days until I am reunited with this lovely lady:

My twin is just too cute! 🙂

This weekend has been pretty low key: lots of homework, cleaning, workouts…I am so ready for the madness that is Fall Quarter to be over!  However, I did have some excitement yesterday in the form of:

Cake!  My lovely bf worked for a cake company, so I convinced him that I needed cake after surviving this week.  So we made snickerdoodle cake!  I honestly was too busy eating cake batter and frosting to remember the ingredients he used (sorry, no recipe) but know that I enjoyed my cake! #yolo

Yes, I am a college student, and therefore I am too lazy to use a plate to eat off of 😉

Marvelous Meals

Hello Friends!

I thought I would start off your Wednesday with some great pics of my eats this week. WARNING: it’s mid-semester paper time which means my photos aren’t the greatest quality.

First up? Crepes! I was supporting a friend who was leading a French Club meeting so, naturally, I had to help her out with eating the crepes that were served 🙂

Awesome use of my leftovers: arugula (it’s been in the fridge for 2 1/2 weeks now, but I just can’t stand to part with it! In the mix: arugula, toasted almond rise (courtesy of Near East), canadian bacon (freeze the big pack from Costco, and pull out as much as needed).

Random Lunch: kale chips, rice, and sweet potato!  Such a wierd comb0 (I had to clean out the fridge) but it worked!

Hot apple cider and a book.  There is something about a hot drink that makes reading really really boring books for school much more bearable.

Rad Wraps

I’m rad…about wraps! But seriously.

Wraps are such an easy way to eat on the go and, if you play your cards right, they can even be healthy (just depends what you decide to fill them with).

Risotto Master

It’s official. I’m a risotto master.

Jokes aside, I’m actually quite proud of how this turned out. Risotto isn’t the easiest thing in the world to make, BUT if you have a solid 1 1/2 hours to kill, I would highly suggest going for it.

Never made risotto before? Here’s how:

If you’ve been following our little blog for a while, you’ll know that I (Hanna) don’t really like to use recipes. Ok, so I use them more as “suggestions.” If you religiously follow recipes when you cook, here’s a great one.

Start with some chicken broth. Warm it on LOW while you chop up your veggies. You want it to be lightly simmering (not boiling) by the time you use it.

You’ll also want some arborio rice (risotto rice). Trader Joe’s has a great option.

Chop veggies! Onions, garlic and mushrooms are great additions to risotto.

This is a two-pan job. Use one to heat the chicken broth, and the other to cook the veggies.

After the veggies cook down a little bit, add your risotto. Keep it in the pan for a good minute or two to get it nice and toasty.

THEN comes the difficult part. Add the chicken stock to the veggies/risotto in 1 cup increments, stirring until the rice absorbs it all up!

Campus has been incredibly foggy the past week, which is very out of the ordinary for the PNW.

This weekend has been a whirlwind of meetings, planning, and paper-writing, but I did take a moment to enjoy a latte from my favorite coffeeshop in town:

A massive TJ’s run also happened, and thank goodness!  I bought kale, yogurt, almond milk (I have officially switched from not liking regular cow milk), fruit and lettuce.
